Most honey on the market today is not healthy for you. It has been heavily processed, chemically refined, and the hives are often treated with a number of antibiotics widely used in beekeeping to control disease and parasites.

The bee hives are close to fields that have been sprayed with toxic agricultural chemicals and the bees uptake these poisons and deposit them in your honey. Further most bee hives are located close to genetically modified crops and the sugars from these plants are not natural and often this results in the honey having a much higher glycemic index and little healthful nutritional value.

But what are the benefits of this superior type of honey— Raw honey contains over 5000 enzymes including amylase, a digestive enzyme for carbohydrates. It contains over 20 amino acids and up to 27 trace minerals. It has antioxidants that provide natural defense against cell

damage.  In addition these antioxidants are believed to aid the body in fighting a host of diseases. The human body was designed to digest natural sugars such as raw honey more readily than refined sugars as evidenced in part by the fact that honey ingestion does not produce the radical effect on blood sugar levels that refined sugar does, nor does it produce the weight gain associated with refined sugar ingestion.

What should raw honey look like ?

Most honeys found in the supermarket are not raw honey but “commercial" honey, which has been heated and filtered so that it looks cleaner and smoother, more appealing on the shelf, and easier to handle and package. When honey is heated, its delicate aromas, yeast and enzymes which are responsible for activating vitamins and minerals in the body system are partially or totally destroyed. Hence, such honey is not as nutritious as raw honey. Characterized by fine textured crystals, raw honey looks milkier and contains particles and flecks made of bee pollen honeycomb bits, propolis.  It will usually granulate and crystallize to a margarine-like consistency after a month or two.

There exists no uniform code when referring to "raw honey". There are no strict legal requirements for claiming and labeling honey as raw. You may find raw honey that have been unprocessed but warmed to retard granulation for a short period of time and allow light straining and packing into containers for sale. Honey as a medicine

Raw Honey was and still is credited with marvelous curative powers.  Books have be written on all the medicinal uses of honey. In addition to its age-retarding properties raw honey has been proven to have beneficial effects as shown below:
-As honey is a pre-digested food (a process done by the bees) it enters the blood stream directly producing energy quickly, unlike refined sugar which has to be digested.
- Proline, an amino acid in raw honey is the primary component in collagen. Collagen is the main structure in bones.

- In the book “Folk Medicine”, Dr Jarvis an ear, nose and throat specialist reveals some startling facts about raw honey and honeycomb. He says the honeycomb is excellent for the treating of stuffy nose, nasal sinusitis and hay-fever. He always says that raw honey can produce healing for skin burns and is essential in the diet of children because it provides the composite of minerals needed for the growing body

The beekeepers and their friends know that honey will cure gastric and intestinal ulcerations, this distressing, prevalent and most dangerous malady, a precursor of cancer. But the news has not yet reached 99% of the medical profession.
- It has been shown to be useful in Rheumatic and Arthritic conditions, especially in combination with Apple Cider Vinegar (Dr D.C. Jarvis).

- It has been used successful in the treatment of liver and kidney disorders, diseases of the respiratory and digestive tracts, weak heart action, infectious diseases, colds, insomnia, poor circulation, and bad complexion.

- It is not mere theory, but has been proved that bacteria cannot live in the presence of raw honey.  A bacteriologist who did not believe this, after a series of tests discovered to his amazement that the disease germs he tested (typhoid, Bronco-pneumonia and Dysentery producing germs) were all killed off in the presence of raw honey.
- Increases hemoglobin count and can prevent or cure Anemia. It is rich in iron and copper depending on the source of the flowers from which it is gathered.

- Is an excellent mild laxative, especially recommended for adults.
